Bombay Peanut and Crisp Mix

Ah, street food: bursting with flavour, prepared in front of you, I just LOVE it.

This mix is my go-to when I’m craving a taste of Indian street food. It reminds me of the hustle and bustle of Mumbai, as you walk through the crowds holding a newspaper cone filled with a spicy snack that awakens all of your taste buds.

So of course, it is one of my favourite no-cook and minimal prep recipes. It’s got crunch, spice and tang, and really, all you have to do is assemble a few pre-packed ingredients, chop a couple of things and mix! It’s as easy as that.

This mix can be served as an appetizer for 4 people, or as a generous starter for 2. It’s perfect for preparing ahead of time if you’re hosting a dinner party (just wait until it’s time to serve before adding the lemon juice). Oh, and did I mention that it is a match made in heaven with a glass of rose?

A quick note: I used Cofresh pre-packed snack mixes here because they are authentic, flavourful and fresh. I haven’t found another brand that matches up to their quality.

Bombay Peanut and Crisp Mix

Crisp, tangy and the perfect partner for your appetizers



Ingredients

  • 40g Cofresh Bombay Mix
  • 25g Cofresh Chevdo Mix
  • 15g potato sticks (these are available in most major supermarkets)
  • 20g salted peanuts
  • 35g red onion, chopped finely
  • -10g fresh coriander, chopped
  • Juice of one lemon
  • 1 tsp red chilli powder

Directions

  1. Mix the dry ingredients in a bowl
  2. Add the chilli powder and onions and mix
  3. Add the coriander and lemon (when ready to serve), and mix
  4. Serve immediately
