Ah, street food: bursting with flavour, prepared in front of you, I just LOVE it.
This mix is my go-to when I’m craving a taste of Indian street food. It reminds me of the hustle and bustle of Mumbai, as you walk through the crowds holding a newspaper cone filled with a spicy snack that awakens all of your taste buds.
So of course, it is one of my favourite no-cook and minimal prep recipes. It’s got crunch, spice and tang, and really, all you have to do is assemble a few pre-packed ingredients, chop a couple of things and mix! It’s as easy as that.
This mix can be served as an appetizer for 4 people, or as a generous starter for 2. It’s perfect for preparing ahead of time if you’re hosting a dinner party (just wait until it’s time to serve before adding the lemon juice). Oh, and did I mention that it is a match made in heaven with a glass of rose?
A quick note: I used Cofresh pre-packed snack mixes here because they are authentic, flavourful and fresh. I haven’t found another brand that matches up to their quality.
BOMBAY PEANUT AND CRISP MIX
Total: 5 mins/ Serves 2 as a starter, 4 as a light appetizer
40g Cofresh Bombay Mix
25g Cofresh Chevdo Mix
15g potato sticks (these are available in most major supermarkets)
20g salted peanuts
35g red onion, chopped finely
10g fresh coriander, chopped
Juice of one lemon
1 tsp red chilli powder
- Mix the dry ingredients in a bowl
- Add the chilli powder and onions and mix
- Add the coriander and lemon (when ready to serve), and mix
- Serve immediately
